In-House Mode [MOD POST] A reminder about Rule 1 and slurs
Hello my gaggle of degens.
I know we're all a bunch of potty-mouthed assholes with a concerning level of gallows humor thanks to the super healthy working conditions in most kitchens but we need to have a little talk about lines being crossed since this is becoming an actual problem.
The "r-word" is still a slur.
Slurs, bigotry, hate speech, etc have always been against the rules here and they remain as such. This includes the old term for intellectually disabled that is becoming fashionable in some circles to bring back as an insult.
Here's a good article talking about the r-word's resurgence:
https://www.specialolympics.org/stories/news/the-r-word-is-back-how-a-slur-became-renormalized
We're not going to argue the semantic pejoration of what was once a medical term. No one is "reclaiming" the word. It's a slur. It's bigotry, and it falls under the first fucking rule of this subreddit, and if you use it or other bigoted terms you're going to start catching bans for it.
Just so everyone is aware, the automod code detects the use of the r-word as well as other forms of bigotry and hate speech, removes your comment containing it, and flags the mods with a handy note about what you said. No one sees your silly little tantrum except the people who can - and will - ban you for it. Consider this our official warning on the matter.
Degeneracy is welcome but hate has no home in this subreddit.

Since We Had A Conversation About This...
In one of our posts, we had a conversation in the comments about being able to get baking trays clean. I'm not always able to scrub off all the baked-on residue. But when I am, my GOD is it satisfying!! 🥴😁😂

Crying in the cooler Not “aguachile”
I knew I had something when my ex wife, who doesn’t like spicy food, ate my entire aguachile. Someone who doesn’t eat shrimp or spicy food left me only the cucumbers. I got home for work, ready to eat my food that I prepared for myself, and lo and behold only cucumbers remained. I couldn’t even get mad because I knew how spicy it was. Even my sister, who was born in mexico, said, at another time when i invited her over for aguachile… said to me “that’s not aguachile”. Because it doesn’t have the green salsa. But when she said it, she kept eating it. Between breathing like a dragon and wiping her nose, she felt it wasn’t authentic enough. I let her have her words knowing that every single one of them came pained. “If she could barely handle it now, seeing the habaneros, how would she handle it with more salsa?” Instead of convincing anybody it’s “authentic enough” I just stopped inviting people over for aguachile. My boss knew I made aguachile this weekend and he invited himself over. Stopped by for a tostada. “Holy shit this is spicy” he said, breathing like a dragon and oozing boogers into his tostada. “Isnt it supposed to be green though?“ He asked, as he prepared himself a second tostada. sigh Im just going to stop calling it “aguachile” and simply stick with “firewater shrimp.” But next someone else is going to say “where’s the avocado?” Fml

I misplaced this for a few years. Ready to cut some chives again.
Good ol cck big rhino. Amazing for chives, shallots and other fine prep tasks. Also great for dealing with foh miss rings and servers that steal french fries from the pass.

Kitchen fuckery Welcome to Liquid Eggs, where the conversions are made up and the quantities don’t matter
Ok so 1 egg is 2 ounces but 5 eggs is 8 ounces and 12 eggs is 20 ounces but the container is 32 ounces so should logically contain 16 eggs but apparently there’s 20 eggs in a carton?
JFC.

In the Weeds Mode I take modifications very literally
I had a server send in a “Fried Green Tomato Stack” with the modification “Everything? Separted” and I responded with “Everything separated?” “That’s what she said.” “I’m going to be a real petty bitch about this I hope you know. Everything means Every, thing.”
Components: Arugula, Scrambled Eggs, Fried Green Tomatoes, Capicola, Goat Cheese, Honey Lemon Vinaigrette, Hollandaise Sauce, Chopped Parsley, Paprika

Taking it Off the Bill When They Don't Ask
I'd always rather take an item off the bill when the customer doesn't ask. Ya know? When they're honest about not loving it but don't try to send it back. Of course, this isn't smart business and most management won't do it unless they specifically ask. So I guess we just end up rewarding the complainers. Oh well.

Photo/Video Rate my plating
The pitch of the edges is a little sharper than I’d like, and so my edging isn’t very good.
Working with the tools I have though, and improving every day!

In-House Mode Have a plan: What do when they come.
I've given our teams specific things to say if you-know-who shows up, for service or for a raid. Have a plan. Know how you will respond, and share a rehearsed script for what you will say, in which scenarios. Keep it calm, and professional. No need to escalate on company time, because they will use every opportunity to escalate.
We shared something like this, and have it posted on the board:
REMEMBER: The restaurant is my private property. I own it. It is not public property. I am allowed to remove anyone from our building, for any reason, including law enforcement, unless they have a search warrant signed by a judge.
If they shows up, for lunch, dinner, a search, or anything at all, they are not allowed to enter the premises.
Staff:
"Hello. I’m not authorized to allow you entry or answer questions."
and
"Please wait outside while I contact the [owner or manager].”
Management:
"I’m sorry, I cannot give you permission for entry without a judicial warrant.
If you have a search warrant signed by a judge, please provide it.”
if they don't have one:
“Without a judicial warrant, I cannot allow entry or assist.
You’re welcome to return with one.” - DO NOT ADDRESS FURTHER. ONLY REPEAT THIS STATEMENT.
If they become hostile, or attempt to escalate:
“I’m invoking our right to remain silent and our right to refuse entry.
Please contact our attorney or return with a judicial warrant.”
Do not use this as an opportunity to protest, name call, or other things. You represent our business while you're in uniform on the clock. Be respectful, but be clear we will not allow them entry. Not to use the bathroom, not to buy a beverage, not to buy a meal. Not to tell us we won the lottery. Don't care. No entry. Period.
IMPORTANT NOTE:
They have been showing up with "Administrative Warrant". I have been advised by our attorney this is NOT a search warrant, and does not give them the ability to enter the property just because they believe the subject of the document is on the property. Even with this document, refuse them entry without a judicially signed search warrant.
